Dairy Free Coconut Matcha (Green Tea) & Honey Ice Cream

I love coconut. It's one of my top 10 favorite flavors. And I love green tea and honey. I tried some Häagen-Daz Green Tea Ice Cream about 6 years ago and it was good, but I don't eat dairy. So I only had that one spoonful.
I recently bought an ice cream machine, and let's just say, I see lots of ice cream and sorbet in my future. I decided to make my own DAIRY free version of green tea ice cream. Not only was it good, it tasted a lot better than Häagen-Daz.
Shhhhh! Don't tell THEM that though.
What You'll Need:
1 can of unsweetened Thai coconut milk (or any full fat coconut milk)
2 tbsp of honey
1 tbsp of (any brand) Matcha (green tea) powder
1/3 cup of sugar
1 tsp of vanilla extract
1/3 cup of coconut milk (optional: I like Califia Farms Toasted Coconut Milk & Silk Almond Coconut Blend)
Directions
1. Leave the can of coconut milk out overnight or put it in the fridge for a few hours. The fat will separate.
2. Mix coconut fat and sugar in a bowl until well blended.
3. Add coconut fat and sugar into ice cream maker and let it mix for a minute or two.
4. Add vanilla, matcha powder and honey and let it mix until desired ice cream consistency.
Note: If you do not have an ice cream maker, you can pour the mixture into a container and make no churn ice cream. Or you can try this old school method.
Get two large ziploc bags. Put sea salt & ice in one bag & your ice cream mixture in the other. Then shake until you get the ice cream texture you desire. Click here to see how this method works.
